Caramelized Onion Pasta
Ingredients
- 12 oz spaghetti or fettuccine
- 3 tbsp Bellindora Caramelized Onion Olive Oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup white wine or broth
- 1/2 cup grated Parmesan
- 1 tbsp butter (optional for richness)
- 1/4 tsp red pepper flakes to taste
- Salt & black pepper
- Handful fresh parsley, chopped
Directions
- Bring a pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water.
- Warm 2 tbsp of the caramelized onion olive oil in a skillet. Add sliced onions and cook until soft and golden.
- Stir in garlic for 30 seconds, then pour in wine or broth. Simmer until reduced by half.
- Add butter (optional), red pepper flakes, and a splash of pasta water. Stir until glossy.
- Add cooked pasta, remaining olive oil, and Parmesan. Toss until silky, adding more pasta water as needed.
- Season with salt and pepper, top with parsley, and serve warm.
