Caramelized Onion Pasta

  1. Bring a pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water.
  2. Warm 2 tbsp of the caramelized onion olive oil in a skillet. Add sliced onions and cook until soft and golden.
  3. Stir in garlic for 30 seconds, then pour in wine or broth. Simmer until reduced by half.
  4. Add butter (optional), red pepper flakes, and a splash of pasta water. Stir until glossy.
  5. Add cooked pasta, remaining olive oil, and Parmesan. Toss until silky, adding more pasta water as needed.
  6. Season with salt and pepper, top with parsley, and serve warm.
