Cherry Balsamic Sauce

  1. If using frozen cherries, thaw first and then drain well. In a small saucepan, combine vinegar, sugar, cherries and water. Bring to a low simmer.
  2. Simmer for 20-30 minutes, stirring occasionally to prevent burning.
  3. When sauce has reduced, remove from heat and stir in a pinch of coarse Kosher salt.
  4. Sauce won’t be the texture of syrup yet- it will still be a little runny, that is normal.
  5. Set aside to cool and thicken.
  6. When cooled, feel free to use!
