Crockpot Apple Balsamic Chicken
Ingredients
- 1 cup apple jelly
- ½ cup apple juice
- ½ cup water
- ¼ cup Bellindora Apple Balsamic Vinegar
- 1 chicken bouillon cube (or 1 tsp ground bouillon)
- 1 tsp garlic powder
- ½ tsp coarse salt
- ½ tsp dried thyme
- ½ tsp smoked paprika
- ½ tsp ground black pepper
- 4 boneless skinless chicken breasts
- 2 tbsp unsalted butter
- 2 tbsp cornstarch
- Cooked rice, egg noodles or mashed potatoes, for serving
- Fresh parsley, coarsely chopped, optional
Directions
- In your slow cooker bowl, whisk together the apple jelly, apple juice, water, balsamic vinegar, chicken bouillon, garlic power, salt, thyme, paprika and pepper. Add the chicken breasts, turning once to coat.
- Set the slow cooker to high for 3 hours.
- Open and skim the top for fat.
- Melt the butter in a small bowl, then whisk in the cornstarch. Stir into slow cooker mixture to thicken the sauce. Continue cooking on low for 15 minutes, or until sauce has thickened.
- Serve over mashed potatoes, rice or noodles and garnish with parsley, if desired.
